coffee producers in Huila. The project brings together carefully chosen
coffees and specialised processing methods to create a distinctive and

1,900 metres above sea level, where Huila’s elevation,
climate and fertile growing conditions help support sweetness, aromatic
complexity and a clean coffee structure.

collaboration with local coffee producers in Timaná, Huila. COTA works
directly with producers to refine fermentation and drying techniques
according to the flavour profile required by specialty coffee roasters.

Coco Loco originally began with two different coconut expressions. One
was brighter and more tropical, while the other leaned toward citrus and
coconut-dessert notes. After several trials and feedback from the market,
the profile was developed into a richer, deeper and more indulgent cup.

The final profile highlights coconut candy, toasted coconut, delicate
vanilla, creamy sweetness and caramel-like dessert notes while still
preserving the structure and terroir of the coffee from Huila.
